For our rye dough, which can weigh up to more than 300 kg, you need a large and powerful kneading machine: The indestructible Viennara, probably built in 1924. We have the 14 ½ model, the third largest shown in the brochure, with a capacity of 330 l. The machine alone weighs 1120 kg, a bowl 330 kg.

We bought it from the Heilmayer bakery (Salzachgässchen, Mülln) in 1973. Around the turn of the millennium, the gears wheels had to be replaced. Otherwise it is almost in its original condition. There is no planned obsolescence here.

It is quite an experience to see the Viennara in action: early in the morning kneading the bread dough or in the evening mixing the sourdough.
